These Chipotle Beer Braised Beef Tacos are bursting with flavour and perfect for a hearty meal. The beef is slow-cooked in a spicy chipotle and beer sauce, making it tender and delicious. Here’s how to make them:
Ingredients:
- 1.5 kg beef chuck roast, cut into large chunks
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce
- 330 ml dark beer
- 1 cup beef stock
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 8-10 small tortillas
- Fresh cilantro, chopped
- Lime wedges
Method:
- Season and Sear the Beef: Season the beef chunks with salt and pepper. Heat the olive oil in a large pot over medium-high heat. Sear the beef on all sides until browned, then remove and set aside.
- Sauté Vegetables: In the same pot, add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Add Flavourings and Liquids: Stir in the chopped chipotle peppers, adobo sauce, cumin, smoked paprika, and oregano. Pour in the beer and beef stock, scraping up any browned bits from the bottom of the pot.
- Slow Cook the Beef: Return the seared beef to the pot. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 2.5 to 3 hours, or until the beef is tender and can be easily shredded with a fork.
- Shred the Beef: Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and mix well with the sauce.
- Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. Fill each tortilla with a generous portion of the shredded beef. Top with fresh cilantro and a squeeze of lime.
These Chipotle Beer Braised Beef Tacos are sure to be a hit, offering a perfect blend of smoky, spicy, and savoury flavours. Enjoy them with your favourite toppings and sides for a truly satisfying meal.
